Last night I made a kind of cupcake I have never made before; chocolate chip cookie dough!  I’m making brown sugar cupcakes and a chocolate chip cookie dough frosting.

Here’s the recipe:

Brown sugar cupcakes:

  • 3/4 cup (1-1/2 sticks) unsalted butter, room temperature
  • 3/4 cup light brown sugar
  • 2 large eggs, room temperature
  • 1-1/3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/2 cup milk
  • 1 teaspoon vanilla

Preheat oven to 350 degrees.  Beat butter for about 30 seconds on high.  Add in brown sugar and mix on medium for about 3 minutes until creamy.  Add eggs in, one at a time.  Mix the flour, baking powder, baking soda, and salt in a separate bowl.  Mix milk and vanilla in another bowl.  Add about ¼ of the dry mixture.  Then add about 1/3 of the milk mixture.  Continue to alternate until it is mixed together.  Bake for 15-20 minutes depending on your oven.  Watch closely after 15 minutes.

Frosting Recipe:

  • 1-3/4 cups confectionary sugar
  • 1/2 cup unsalted butter, chilled
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon milk
  • Eggless cookie dough (recipe below)

Combine 1-1/4 cup of confectionary sugar with unsalted butter, salt, and vanilla.  Scrap the bowls to make sure all of the ingredients get combined.  Add milk and continue to mix the ingredients.  Slowly add the last ½ cup of confectionary sugar.  After this add the eggless cookie dough which should be mixed in advance.

Eggless Cookie Dough Recipe:

  • 1/4 cup butter, softened
  • 1/4 cup brown sugar, plus 2 tablespoons
  • 2 teaspoons water
  • 1/2 teaspoon vanilla
  • 1/2 cup flour
  • 1/4 teaspoon salt
  • 1/3 cup mini chocolate chips (optional)

Cream the butter and brown sugar together.  Add water and vanilla and mix until well combined.  Then add flour and salt until mixture is completely combined.  At this point you can either add miniature chocolate chips in and pipe the frosting on top of the cupcakes or you can pipe the frosting without the chips and add them on top after.  I choose to add the chips after because I wasn’t able to find miniature milk chocolate chips.  I think they still turned out looking great!
