Last night I made a kind of cupcake I have never made before; chocolate chip cookie dough! I’m making brown sugar cupcakes and a chocolate chip cookie dough frosting.

Here’s the recipe:
Brown sugar cupcakes:
- 3/4 cup (1-1/2 sticks) unsalted butter, room temperature
- 3/4 cup light brown sugar
- 2 large eggs, room temperature
- 1-1/3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1/2 cup milk
- 1 teaspoon vanilla
Preheat oven to 350 degrees. Beat butter for about 30 seconds on high. Add in brown sugar and mix on medium for about 3 minutes until creamy. Add eggs in, one at a time. Mix the flour, baking powder, baking soda, and salt in a separate bowl. Mix milk and vanilla in another bowl. Add about ¼ of the dry mixture. Then add about 1/3 of the milk mixture. Continue to alternate until it is mixed together. Bake for 15-20 minutes depending on your oven. Watch closely after 15 minutes.
- 1-3/4 cups confectionary sugar
- 1/2 cup unsalted butter, chilled
- 1/8 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1 tablespoon milk
- Eggless cookie dough (recipe below)
Combine 1-1/4 cup of confectionary sugar with unsalted butter, salt, and vanilla. Scrap the bowls to make sure all of the ingredients get combined. Add milk and continue to mix the ingredients. Slowly add the last ½ cup of confectionary sugar. After this add the eggless cookie dough which should be mixed in advance.
Eggless Cookie Dough Recipe:
- 1/4 cup butter, softened
- 1/4 cup brown sugar, plus 2 tablespoons
- 2 teaspoons water
- 1/2 teaspoon vanilla
- 1/2 cup flour
- 1/4 teaspoon salt
- 1/3 cup mini chocolate chips (optional)
Cream the butter and brown sugar together. Add water and vanilla and mix until well combined. Then add flour and salt until mixture is completely combined. At this point you can either add miniature chocolate chips in and pipe the frosting on top of the cupcakes or you can pipe the frosting without the chips and add them on top after. I choose to add the chips after because I wasn’t able to find miniature milk chocolate chips. I think they still turned out looking great!
My husband and I just had a wonderful week with our family! We went up to PA for my cousin’s wedding. We had a great time seeing both my family and Austin’s. Our sweet puppy was able to run and play outside, which she doesn’t get to do at our apartment complex. My parents live right next to my aunt and uncle’s house and my grandma lives on the other side of them. They have a big pond behind all of their houses, but Bella is apparently not that in to swimming. She loved having the freedom to run and play outside though. She also got to meet my mom’s dog and my sister’s dog. They loved each other!
One of the best parts of the week was how much time I got to spend with my sister doing fun, girly things! We got pedicures together, which happens to be one of my favorite things to do! My foot is on the left and Katie’s is on the right.

We also got to visit Austin’s parents while they were camping for the fourth of July. It was a perfect week to see our family! I loved every second we got to spend with our family.
I found the most wonderful place in the world….Hobby Lobby! I can’t believe I hadn’t been there before. I found so many bargains in there clearance home section. I found beautiful decorations for our bedroom for about $2.70 each.
Clearly I have a new love of old antique-looking keys.
Since we moved here a year ago, we have done limited decorating in our apartment. It’s not that we meant to but we were taking our time to find the right things. Somehow it is a year later and we still have yet to buy curtains. About halfway through the year we didn’t think we would be staying after our lease ended so I stopped looking for curtains. But we just signed on for another six months in our apartment and I decided it wasn’t worth waiting to do some home decorating. We purchased a new bookshelf from Walmart to add a little something to our spare bedroom, turned office/ storage space room and I have been finding little odds and ends to add to our home as well. We hung up two shelves from IKEA in our bedroom as well as a gorgeous shelf I found at a yard sale that I happen to adore.
We never painted in this apartment so all of the walls are white. I don’t mind it too much right now, but I am very excited to paint the next time we move!
Austin and I just celebrated our one year anniversary! I cannot believe how fast it has gone! We were able to go away for two days to Williamsburg, VA. It was a great trip, but it went way too fast. We just arrived back home yesterday afternoon.

Williamsburg is only about an hour from where we live so the drive went fast. We checked in to the hotel around 11:30. We got Bella all settled in the room and we left to explore the town. We found a cute little area called Merchants Square where we sat down to lunch at a café.
Afterwards we walked around to explore all the shops in the area. The only thing we came away with was a dog biscuit that had been dipped in peanut butter for Bella, which she loved!
We also spent some time shopping at the outlets in Williamsburg. The shops there were amazing! I could have spent so much time there! I found a great necklace from Banana Republic that was only $11. It is beautiful!
Austin and I each got a pair of sunglasses for $10 each. Then we hit American Eagle, one of Austin’s favorite stores. He got three T-shirts for $8 each and I got one as well. All in all in was a pretty successful shopping trip.
We had planned to go out to a nice dinner, which we did, but it wasn’t exactly what we had planned. Austin and I are both pretty indecisive when it comes to places to eat. We can drive around for an hour before we decided what we want. We did just that while we were in Williamsburg. We had wanted to go to a unique place there and somehow, after driving around for about 40 minutes, we ended up at Chili’s. Dinner was great though and we really enjoyed having time together.
Sadly, the pool closed at 9 PM at the hotel we were staying at and we didn’t get back from dinner until just after 9. Instead, we played fussball and shuffle board. It ended up being a lot of fun and tiring. I was exhausted by the end of the day.
Thursday wasn’t really an eventful day. We only stayed in Williamsburg until noon so that Austin could go in to work for awhile. Overall the trip was a lot of fun and I can’t want to go back to Williamsburg again!

First off, I adore baking! I love to bake cakes and cupcakes and muffins and pies and all sorts of goodies! I look forward to sharing some of the treats I have made as well as recipes and tips.
I also LOVE clothes! What girl doesn’t? I am an obsessive Target shopper! I also love TJ Maxx, JC Penny’s, Forever 21, New York and Company, Francesca’s, and a ton of other stores. I recently discovered the coupon section on Target’s website! They actually have coupons on certain brands of clothes and shoes and accessories and home items! I also happen to have 3 Targets within 15 minutes of my home (2 within 5 minutes and the 3rd is 15 minutes away). Not to mention 2 big malls within about 10 minutes of my apartment. Richmond is a wonderful place to live!
I also adore DIY projects! I have really gotten into finding ways to make our apartment a little bit cuter at the smallest cost I can. I am working my way towards becoming a couponing girl. It is not as easy as it looks! But until I can figure all of that out, I am content to hunt some serious bargains out!
Just to begin, I would like to tell you a little about myself. I am married to a wonderful man, Austin. We have been married for a whole year this coming Tuesday! I can’t believe it has been that long! We have an adorable puppy, Bella, that I just can’t get enough of! I love having her around to keep me company! We are currently living in Richmond, VA. My husband is working as a car salesman and I am in between jobs. I am taking two classes online to finish up my undergrad degree in Religion with a specialization in Women’s Ministry. My husband and I both went to Liberty University for undergrad. I am also hoping to begin pursuing my master’s degree soon.
